Set oven to 500F

In a large bowl, add yeast, sugar, sifted flour, olive oil and the salt on top.
Add two cups warm water - using spatula mix and form to a dough, add more water if necessary.
Now use your hands - knead in the bowl until you have one ball of dough. Remove from bowl and hand knead for 5 mins on floured surface.
Clean the bowl and add 1 Tbs olive oil and spread around the bowl. Put in the dough and move around to coat with olive oil, cover with cling film.
Let rise for one hour in a warm place.
Turn out dough cut into 8 pieces for pita, 4 pieces for small pizzas and 2 pieces for large pizzas. form into nice round balls, roll out to 1/4 in thick with a rolling pin and leave to rest for 15 mins.
Use cornmeal to avoid sticking and bake on a pizza stone.
For pita bake for approx 3 mins two at a time until ballooned up and lightly brown.

I use 2 Tbs "King Arthur Flour" freeze dried yeast
